My Mom's Advice + Giveaway from Aquaphor

My mom isn't the kind of mom to tell you what you should or should not do as a mom.  She doesn't really even offer advice until you explicitly ask her for it.  I love that about her because there are so many people who shove their advice down your throat whether you want it or not.  


My mom's best advice was the kind that she never said, it's the things she did while raising me that I use in my daily parenting skills.

I never really understood all that my mother did or why she acted the way that she did while I was growing up.  I never really understood it all until now that I'm a mom.  For instance, when I was a kid, she would only let me sleep at a friend's house if she knew the parents.  I thought that was so dumb!  I knew the kid and the mom, wasn't that enough?  Now that I'm a mom, I'm so on that page!  My kids can't sleep at anyone's house unless we are friends with the family.  And to be honest, the only houses outside of family they are allowed to sleep at are our "Cuban cousins" house.  You know, the friends that are so close they are practically family.  

What piece of advice has your mom given you that you will never forget?

My Angel's First Communion

Little Ricky received his First Holy Communion this past weekend.  We feel so blessed that this little guy is growing up learning and loving the Catholic faith as we have.  

It was so amazing watching him as he said all of his prayers, sang the hymns, and went before the priest to receive the eucharist for the very first time.  What a blessing for parents to witness!

He was surrounded by family and friends who love and support his faith.  We couldn't be happier!





God Bless Little Ricky & the rest of the little munchkins who received their First Holy Communion this year!

Summer Trends with The Children's Place

SUMMER IS ALMOST HERE!!  (Did I sound too excited about that?)  I LOVE summer!  No set schedule, lazy days & nights, pools, beaches, ice pops, etc.  Everything about summer is just awesome!

All school year, my kids wear a uniform.  Summer fashion is a must in our house.  The kids can dress themselves and express their own fashion sense (or lack there of).  I like to keep mix and match pieces in their wardrobe so that it's a no brainer with items that go together.  This is especially essential with "Little Ricky" because he tends to put things together that just don't go!

That's why I love shopping at The Children's Place for their fashion needs.  All of the items are able to mix nicely so that I don't have to cringe at their outfit choices.  I would love for the boys to wear the layered look.  You know, a graphic t with a plaid button down and a jean jacket on top.  How cute would they be?  So trendy.  



In the world of boys, their biggest contribution to the fashion world is mesh shorts and a team t-shirt.  Fun. 

My favorite piece at The Children's Place is the elastic waist shorts.  They are so versatile and are really roomy for the boys.  The wide variety of graphic t's come in all the latest trends that the boys want. 

Did I mention the price?  That's another reason why I love The Children's Place.  I can get them great clothing for a great price.  Their sales are out of this world.  Jeans can be as cheap as $10 and sometimes you can get t-shirts for as low as $2.  






The Children's Place has the cutest accessories for boys too.  I mean, who doesn't love a mini fedora and some aviator glasses?  How do I get my kids to wear them?

My Newest Color Obsession

Do you have certain colors that you are attracted to during certain times of the year?  Whenever I'm shopping, I feel inclined to gravitate toward whatever color I happen to be wearing that day.  It's almost like the power of suggestion.

I was recently shopping for a dress to wear to an upcoming event.  I started shopping with nothing in mind at all.  I like to do this so that I am "open" to everything.  Well, I tried on this dress that was ABSOLUTELY PERFECT.  Let's not talk about the fact that it didn't fit & they didn't have another one...  Well, the dress was orange and since then I've been completely obsessed!

Maybe I'm obsessed because it's a trend for this summer, or maybe it's just a happy color that keeps drawing my eye in.  All I know is I'm not the only one who likes it...

And this vibrant color is not just for fashion.  I love it for the home as well.  Changing up the colored accents in a plain room is so great!

Pay It Forward Friday ~ Sweet Corn Exchange + Recipe

Spring has sprung, along with one of the sweetest treats of the season - fresh sweet corn! Over the last few years, sweet corn has become a spring vegetable that’s just as highly anticipated by those in the know as the season’s first peas, asparagus, and radishes. Available nationwide, fresh sweet corn is harvested throughout the spring – good news for anyone who wants to get their hands on some today!

Our recipe for Charred Corn Tacos with Radish Zucchini Slaw combines the sweet irresistible crunch of grilled corn with refreshing herbs and spring radishes all topped off with a squeeze of lime and creamy cheese. It’s a dish that tastes just as good as it looks and though it’s great for vegetarians and anyone eating gluten-free, it will satisfy even the most devoted carnivore. It’s the perfect dish to prepare if you’re eager to warm up the grill on a warm spring day and can be made just as easily indoors. 



 
Charred Corn Tacos with Radish Zucchini Slaw
 
Extra Virgin Olive Oil
Salt and freshly ground pepper
4 ears corn
1/2 small red onion, thinly sliced
2 1/2 tablespoons fresh lime juice
1 teaspoon maple syrup
1 jalapeno, seeded and thinly sliced
3 tablespoons torn mint leaves
3 tablespoons torn parsley leaves
3 tablespoons torn cilantro leaves
1/2 cup (2 1/2 ounces or 70 grams) crumbled feta cheese (or another salty, crumbly cheese such as ricotta  salata or cotija)
1 cup red radishes trimmed and thinly sliced
1 small zucchini
Salt
10 to 12 small (6-inch) soft corn tortillas

Brush the corn with olive oil and season with salt and pepper. Over a hot grill or an open gas-stove flame char the ears of corn until well-blackened but not completely burnt. Remove cobs from heat, and when cool enough to handle, shave off kernels using a large knife and reserve. 

In a small bowl, combine the onion and all but a teaspoon of lime juice and let stand for 10 minutes. Stir in the maple syrup, jalapeno and 2 tablespoons of oil and season with salt and a pepper. Set aside. 

Cut radishes and zucchini into tiny matchsticks. Toss radishes and zucchini together. Pour the remaining lime juice over the radish and season with salt to taste. Add more lime juice if desired. Set aside. 

Coat the bottom of a cast-iron skillet with olive oil and wipe it out so only the thinnest slick is left behind. Heat the skillet on high. Once hot, cook each tortilla for about 30 seconds to 1 minute on each side, until lightly blistered.  

While you finish heating your tortillas, in a large bowl, add the fresh herbs to the corn kernels. Fill each taco with a few small spoonfuls of the corn mixture, the maple syrup and lime onions and jalapenos, a bit of the radish-zucchini slaw, and top with crumbled cheese. 


YIELD: 10-12 servings
